Making Truffles

Truffle Recipe 1

  1. Soften butter against the side of a bowl. When smooth, gradually add and mix in fine caster sugar (or icing sugar).
  2. Add desired oil based flavor.
  3. Mix in melted chocolate until completely mixed.
  4. Place into desired containers or use in centre of chocolates.

Truffle Ingredients 1

  • 150g (8oz) Melted chocolate
  • 125g (4oz) Butter
  • 175g (6oz) Icing sugar

Truffle Recipe 2

  1. Gently warm cream until hot to touch, (do not boil), then cool quickly in the freezer until back to room temperature. This scalded cream is then added to the melted chocolate and thoroughly mixed. Scalded cream will keep longer in the mixture because of less bacteria.
  2. Add desired oil based flavor.
  3. Whisk until set.
  4. The set mixture will look duller in color.

Truffle Ingredients

  • 500g (1lb) Melted chocolate
  • 250ml (8fl oz) Thickened (double) cream

Truffle Method 2

To both of these recipes, egg yolks can be added to give a richer flavor. Approximately 1-2 egg yolks per 100gm (4 oz.) of mixture.
As an alternative oil based flavors, nuts, coffee, cinnamon or dried fruits can be added or honey can replace part of the sugar in the mixtures.
